Spring is in the air and “Maple Month 2018″ is just around the corner

Many of New Hampshire’s maple syrup houses have already fired up their boilers and have started the process of boiling the sap into syrup!  While March 10th through April 1st 2018 is Maple Sugaring Month when many of the state’s maple syrup producers open their doors to the public, the 23rd annual New Hampshire Maple Weekend is March 24th & 25th.
Come visit our beautiful state and take a tour to see the craft of maple sugaring in action! You can meet the maple producers and enjoy tastes of fresh syrup. Locations will offer a variety of other samples such as maple candy, cookies, coffee, donuts and even pancakes.

Here is a recipe for Ruth’s maple cookies made with real NH maple syrup.

Maple Cookies
½ cup shortening
1 cup brown sugar
1 egg
½ cup grade A dark NH maple syrup
1 tsp maple extract
1 ½ cup flour
2 tsp baking powder
½ tsp salt
1 cup coconut

Cream shortening, brown sugar until fluffy. Beat in the egg, syrup, vanilla until mixed. Combine flour, baking powder and salt; add to the creamed mixture. Stir in coconut.
Drop by tablespoonfuls 2 inches apart on greased baking sheets. Bake 375◦ for 12 minutes or until light brown. Yield 36 cookies.
